No Halloween celebration would be complete without a few trick or treaters and of course some great food.
However, if you would much rather celebrate the occasion a little more subtly, this recipe is just for you.
Pumpkin Soups – You will need
Get yourselves down to Asda for this one:
1 tablespoon olive oil
1 red onion (chopped)
3 garlic cloves, crushed – that’ll keep the vampires away
2 (300g) golden delight potatoes, peeled, chopped
1kg butternut pumpkin peeled, chopped
1/4 teaspoon dried chilli flakes (add more for a little more heat)
2 teaspoons ground coriander
1 Nor chicken style liquid stock
1/2 cup pure cream
Pure cream to serve
Chopped fresh chives to serve

Pumpkin Soup – The Steps
Sounds quite a bit for some pumpkin soup, but bear with us the steps are as easy as 1 2 3
Step 1:
Heat oil in the saucepan over a medium to high heat.
Chuck in the garlic and onion. Cook these bad boys for around 3 minutes, don’t forget to stir until the onion has softened.
Add potato and pumpkin, cook for a further 5 minutes or until the potato starts to brown.
Add a spot of chilli and coriander, cook for a further minute or until fragrant, add more if required.
Step 2
Get the stock in the pan and bring it to the boil.
Reduce the heat to a medium-low heat and allow to simmer for 10-12 minutes or until potato and pumpkin are tender.
Set aside for 2 minutes to allow to cool
Step 3
Blend in batches until smooth.
Return to the pan, over a low hear, stir in the cream and cook for a further minute.
Season with pepper
Divid between below and top with cream.
Server with toast or some crusty bread.
